A flavorful and easy-to-make Garlic Lemon Chicken recipe that features tender chicken thighs marinated in a tangy lemon-garlic mixture, served with roasted potatoes and broccoli, and topped with a creamy Yogurt Parmesan Herb Sauce.

Chicken:

  • 1 ½2 pounds boneless skinless chicken thighs

Potatoes:

  • 1 pound baby Dutch potatoes, quartered

Broccoli:

  • 3 cups broccoli florets

Lemon Garlic Marinade:

  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 tablespoon Dijon mustard
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • 1/2 tsp sugar

Yogurt Parmesan Herb Sauce:

  • 1 cup Greek yogurt or sour cream
  • 1/4 cup finely grated Parmesan
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped chives (optional)
  • 1 tablespoon minced dill (optional)
  • 1/4 tsp salt
  • 1/4 tsp ground cumin

Instructions

  1. Preheat oven to 400 degrees F. Combine the Lemon Garlic Marinade ingredients in a sealable bag. Marinate chicken for 20 minutes.
  2. Line a sheet pan with foil and spray with cooking spray. Add potatoes and bake for 15 minutes.
  3. Remove pan from oven and add broccoli and chicken. Bake at 400 degrees F for 17-22 minutes.
  4. Prepare Yogurt Parmesan Herb Sauce.

Notes

  • If using chicken breasts, adjust cooking time accordingly.
  • Marinate chicken for better flavor.
  • Adjust seasoning to taste.
  • Optional: Garnish with additional herbs before serving.
