This Greek Chicken Salad is a refreshing and flavorful dish that is perfect for a light lunch or dinner. Made with tender rotisserie chicken, crisp cucumbers, juicy grape tomatoes, and a creamy Greek yogurt dressing, this salad is sure to become a favorite.

For the Salad:

  • 3 cups rotisserie chicken
  • 1½ cups cucumber (peeled and diced)
  • 1½ cups grape tomatoes (chopped)
  • ½ cup red onion (diced)

For the Dressing:

  • 1 cup plain Greek yogurt
  • 1 lemon (juiced)
  • 2 cloves garlic (minced)
  • 23 tbsp fresh dill (divided)
  • Salt & pepper (to taste)

Instructions

  1. Shred: Remove the skin from the rotisserie chicken, shred using your hands, and place in a large bowl.
  2. Stir: In a small bowl, mix Greek yogurt, lemon juice, garlic, 1-2 tbsp dill, salt, and pepper. Set aside.
  3. Prepare Vegetables: Dice cucumber, chop tomatoes, and dice red onion. Add them to the bowl with the chicken.
  4. Serve: Pour the dressing over the chicken and veggies. Stir to combine. Serve on pita bread or over lettuce.
