For Chicken Souvlaki:

  • 4 boneless chicken breasts (approx. 1 kg/35 ounces)
  • 4 tbsps olive oil
  • juice of 1 lemon
  • 1 clove of garlic, minced
  • 2 tbsp dried oregano
  • salt and freshly ground pepper

For Tzatziki Sauce:

  • 1 cucumber
  • 2 cloves of garlic, minced
  • 1/4 cup extra virgin olive oil
  • 500g strained yogurt (18 ounces)
  • 12 tbsps red wine vinegar
  • a pinch of salt

For Serving:

  • 8 pita breads
  • olive oil
  • 12 tsps dried oregano
  • 1 tomato, sliced
  • 1 red onion, sliced
  • fried potatoes (optional)
  • romaine (cos) lettuce (optional)
  • salt and freshly ground pepper
  • 89 wooden skewers

Instructions

  1. Prepare the Chicken Souvlaki Marinade: Cut chicken breasts into pieces, mix with olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate for 30-60 minutes.
  2. Make the Tzatziki Sauce: Blend olive oil and garlic, grate and drain cucumber, then mix with yogurt, vinegar, and salt. Chill.
  3. Assemble the Chicken Souvlaki: Thread marinated chicken onto skewers.
  4. Cook the Chicken Souvlaki: Grill skewers for 8-10 minutes until cooked through.
  5. Prepare the Pita Bread: Oil and season pita bread, then bake for 2 minutes.
  6. Serve: Arrange red onions on a platter, top with chicken skewers, olive oil, and lemon juice. Serve with warm pita bread, tzatziki sauce, and optional toppings.
