Ingredients

Scale

For the Marinade:

  • 4 skinless chicken breasts (about 6-ounces each) (total of around 1 ½ pounds)
  • ⅓ cup plain Greek yogurt (0%, 2% or 5%)
  • 1 tbsp fresh lemon juice
  • ½ tsp lemon zest
  • 34 large garlic cloves (minced)
  • 1 tsp paprika
  • 1 tsp cumin
  • ¾ tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup freshly chopped cilantro or parsley (plus more for serving)

Instructions

  1. Mix the Marinade: In a mixing bowl, whisk together the yogurt, lemon juice, lemon zest, garlic, paprika, cumin, onion powder, salt, pepper, and cilantro.
  2. Marinate the Chicken: Pat the chicken breasts dry and place them in a resealable bag. Pour the yogurt marinade over the chicken, seal the bag, and coat the chicken well. Let it marinate for at least 45 minutes or up to 24 hours.
  3. Cooking Methods: Choose between grilling, using an indoor grill pan, baking in the oven, or air frying the chicken until cooked through.
  4. Rest and Serve: Allow the chicken to rest for 5 minutes before slicing or serving.

Notes

  • For best results, marinate the chicken for at least 45 minutes.
  • Adjust cooking times based on the thickness of the chicken breasts.
  • Feel free to customize the marinade with additional herbs and spices to suit your taste.
