  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 2 Tbsp tomato paste
  • ¼ cup onions, red or yellow, chopped
  • ¼ cup water

Jalapeño Cilantro Sauce

  • ⅓ cup sour cream
  • 1 jalapeño, sliced, seeds discarded for mild flavor
  • ½ tsp salt
  • ½ tsp cumin
  • ⅓ cup fresh cilantro
  • 1 Tbsp fresh squeezed lime juice

Burrito Bowl Toppings

  • ½ cup long grain rice, uncooked
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn kernels, drained
  • ½ cup tomatoes, diced
  • ¼ cup shredded cheese, more as needed

Instructions

  1. Cook the Rice: Start cooking the rice according to the package instructions, which usually takes about 20 minutes. This will be the base of your burrito bowl.
  2. Brown the Ground Beef: Heat a large deep skillet over medium-high heat. Add the ground beef to the skillet and cook for about 4 minutes until browned. Drain excess grease by soaking it up with paper towels, leaving a little grease for flavor and sauce thickening.
  3. Add Seasonings and Vegetables: To the skillet, add chili powder, garlic powder, onion powder, paprika, cumin, salt, and cayenne pepper. Stir well to coat the meat with spices. Then add tomato paste, diced onions, diced red and green bell peppers, and ¼ to ⅓ cup water or broth for moisture.
  4. Simmer the Beef Mixture: Cover the skillet and simmer on the lowest setting for 6-8 minutes. Stir occasionally. If the mixture seems too runny, remove the lid and simmer uncovered briefly to thicken. Using leaner ground meat may result in a thinner sauce consistency.
  5. Make Jalapeño Cilantro Sauce: While the beef simmers, combine sour cream, sliced jalapeño (seeds removed for mild heat), salt, cumin, fresh cilantro, and lime juice in a blender or food processor. Blend until mostly smooth to create a creamy, spicy sauce.
  6. Assemble the Burrito Bowls: Begin with a scoop of cooked rice in each bowl. Top with the ground beef and vegetable mix, then add corn kernels, black beans, shredded cheese, and diced tomatoes. Drizzle a generous spoonful of the jalapeño cilantro sauce over everything and serve immediately.

Notes

  • Ground turkey or venison can be used as alternatives to ground beef; just reduce the amount of added water or broth since these meats have less fat.
  • If you prefer less heat, discard the white flesh and seeds of the jalapeño before blending the sauce. Leaving them in increases spiciness.
  • To reduce calories, omit the cheese and rice, or substitute rice with chopped romaine lettuce for a lighter bowl.
  • Store leftovers in airtight containers in the refrigerator for up to 4 days. This dish also freezes well for up to 2 months.
