Ingredients

Scale

Protein and Vegetables

  • 1 lb ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced

Spices and Seasonings

  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Other Ingredients

  • 1 tbsp olive oil
  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh parsley or cilantro, chopped, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish to prepare for baking.
  2. Cook the Ground Turkey: Heat the olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until softened. Add ground turkey, breaking it up with a spoon, and cook until browned, about 5-6 minutes. Drain excess fat if necessary.
  3. Add the Vegetables and Seasonings: Stir in minced garlic, diced red bell pepper, sweet potatoes, smoked paprika, ground cumin, dried thyme, salt, and pepper. Cook for 3-5 minutes until the spices release their fragrance and the vegetables begin to soften.
  4. Assemble and Bake: Transfer the turkey and vegetable mixture to the prepared baking dish. Cover with foil and bake for 25 minutes until sweet potatoes are tender.
  5. Add Cheese and Finish Baking: Remove foil, sprinkle shredded cheese evenly over the top, and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  6. Serve: Garnish with fresh parsley or cilantro if desired. Serve hot and enjoy this flavorful and nutritious meal.

Notes

  • You can substitute the shredded cheese with a dairy-free alternative to make this dish dairy-free.
  • Using fresh herbs such as parsley or cilantro adds a bright flavor but can be omitted if unavailable.
  • For a spicier version, add a pinch of chili flakes or chopped jalapeño when cooking.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
  • To save time, use pre-diced sweet potatoes or frozen diced sweet potatoes.
