For the Stew:

  • ¼ pound bacon
  • 2 pounds boneless beef chuck, chopped
  • Kosher salt and black pepper
  • 4 sticks celery, chopped
  • 3 large carrots, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 large potatoes or parsnips, diced
  • 1 turnip, diced
  • 3 ounces tomato paste
  • 1 (12 ounce) bottle Guinness
  • 4 cups low sodium chicken broth
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 3 sprigs thyme
  • 1 tablespoon cornstarch, or as needed
  • ½ pound cremini mushrooms, sliced (optional)
  • Chopped parsley

For the Dumplings:

  • 1 ½ cups self-rising flour
  • 1/2 teaspoon garlic powder
  • 1/3 cup shortening
  • 3/4 cup shredded Irish sharp cheddar
  • 2/3 cup milk
  • 2 tablespoons mixed fresh herbs (parsley, chives, thyme)

Instructions

  1. Cook the bacon: In a large pot, cook bacon until crispy. Remove, crumble, and set aside.
  2. Brown the beef: Season beef with salt and pepper, then brown in bacon fat. Set aside.
  3. Saute veggies: In the same pot, sauté onion, celery, and carrots until soft. Add garlic and tomato paste.
  4. Add liquids: Pour in Guinness and Worcestershire sauce, scraping up browned bits. Return beef to pot, add chicken broth, bay leaf, and thyme.
  5. Simmer: Cover and simmer for 1 1/2 hours. Add potatoes, turnip, and simmer until vegetables are tender.
  6. Thicken: If needed, add cornstarch slurry to thicken stew. Add mushrooms and bacon.
  7. Make dumplings: Mix flour and garlic powder. Cut in shortening, stir in cheese, herbs, and milk. Form dough balls.
  8. Bake: Place dumplings on stew, bake at 350°F until golden brown and cooked through.
  9. Serve: Garnish with parsley and enjoy!

Notes

  • This stew is even better the next day as the flavors meld together.
  • You can customize the vegetables based on your preferences.
  • Ensure the stew is bubbling before adding the dumplings to ensure they cook through properly.
