These Healthy Almond Joys are a delightful homemade version of the classic candy bar. Made with wholesome ingredients like shredded coconut, maple syrup, and dark chocolate, these treats are easy to make and perfect for satisfying your sweet tooth.

Ingredients

For the Coconut Base:

  • 3 cups unsweetened finely shredded coconut
  • 1/4 cup maple syrup or honey
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla extract (*Optional but recommended)
  • pinch of sea salt (*optional but recommended)

For the Chocolate Coating:

  • 1 cup Chocolate bars, chopped (*or chocolate chips. See post for my recommendations!)
  • 2 tsp coconut oil

Additional:

  • raw almonds

Instructions

  1. Make the coconut base: Combine all of the coconut base ingredients in a food processor and process for about 40 seconds until sticky. Be careful not to over-process.
  2. Divide the coconut mixture: Press the coconut mixture into mini muffin pan cavities firmly.
  3. Melt the chocolate: Melt chocolate and coconut oil together until smooth.
  4. Coat the coconut bites: Cover the coconut layer with chocolate, place an almond on top of each, and freeze for 3-4 hours.

Notes

  • You can store these Almond Joys in the freezer for longer shelf life.
  • Feel free to customize by adding different nuts or seeds to the coconut base.
