Chicken Parmesan:

  • 1.5 lbs boneless, skinless chicken breasts (about 3 large chicken breasts OR 1.5 lbs chicken cutlets)
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella
  • 1.5 cups marinara sauce

Breading Mixture:

  • 1 cup whole wheat bread crumbs (unseasoned)
  • ½ cup parmesan cheese
  • ¼ teaspoon pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Butterfly and pound chicken breasts: Slice the chicken breasts in half lengthwise and pound them until they are ¼ inch thick.
  2. Preheat oven: Preheat oven to 425°F and line a baking sheet with parchment paper.
  3. Prepare breading: Set up three shallow bowls with whole wheat flour in the first, whisked eggs in the second, and bread crumb mixture in the third.
  4. Bread the chicken: Coat each chicken cutlet in flour, then egg, then bread crumb mixture. Place on baking sheet.
  5. Bake: Bake at 425°F for 15 minutes, flip, then bake for another 15 minutes.
  6. Add toppings: Top each cutlet with marinara sauce and mozzarella, then broil for 2 minutes until cheese is melted.
  7. Serve: Serve over pasta or salad.
