Ingredients

Rolled Oats:

1 cup

Dried Cranberries (or Raisins):

½ cup

Natural Peanut Butter or Almond Butter:

¼ cup

Honey or Maple Syrup:

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine oats, nuts, seeds, dried fruits, cinnamon, and salt.
  3. In a small saucepan over low heat, melt peanut butter and honey together until smooth. Stir in vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir until fully coated.
  5. Using a cookie scoop or spoon, form cookies on the baking sheet and gently press to flatten into rounds.
  6. Bake for 12–15 minutes or until golden and firm. Let cool completely on a rack to set.
