For the Bars:

  • 1 cup butter (softened)
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon

For the Topping:

  • 1/4 cup granulated sugar
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F. Spray a 9×13 pan with non-stick cooking spray and set aside.
  2. Cream together softened butter and both sugars with a hand-held mixer or by hand. Add eggs and vanilla, mix until combined.
  3. Add the dry ingredients (flour, salt, baking powder, and cinnamon), mix until just combined. Press into the prepared 9×13 pan.
  4. Combine the topping cinnamon and sugar, then sprinkle over the dough. Bake for 25-30 minutes until lightly browned.
  5. Let the bars cool for 30 minutes, then cut into squares. Serve warm or at room temperature. Store in an airtight container for up to 4 days or freeze for 3 months.
