For the Cherry Syrup:
- 175g pitted fresh sweet cherries
- 115g water
- 90g raw honey
- 2 teaspoons lime zest
- 55g freshly squeezed lime juice
For Serving:
- 850g club soda
- Fresh cherries, for garnish
- Lime slices, for garnish
- Cook the Cherries – Combine cherries and water in a medium saucepan. Bring to a boil, then reduce heat. Lightly mash cherries, partially cover with lid, and simmer for 15 minutes until cherries are softened.
- Blend Syrup Mixture – Transfer cooked cherries and their juices to a blender. Add honey, lime zest, and lime juice. Blend until completely smooth.
- Strain and Chill Syrup – Pour blended mixture through a fine mesh strainer to remove any solids. Refrigerate syrup until thoroughly chilled.
- Assemble Drinks (Individual) – Fill each 225g glass with ice. Add 30g syrup per glass, top with club soda, stir, and garnish with fresh cherries and lime slices.
- Assemble Drinks (Pitcher) – Fill a pitcher with ice. Add all prepared syrup, pour in 850g club soda, stir, and garnish with cherries and lime slices. Serve immediately over ice.
- Storage – Store unused cherry syrup in an airtight container in the refrigerator for up to 1 week, or freeze for up to 1 month. Thaw syrup overnight in the refrigerator before use.
