Main Dough
- 1 ½ cups wholemeal self-raising flour (plus extra for kneading)
- 1 cup Greek yoghurt
- ¼ cup sultanas
- 1 tbsp coconut sugar
- 1 ½ tsp cinnamon
- 1 tsp mixed spice
- Pinch of sea salt
Cross Paste
- ¼ cup plain flour
- 4 tbsp water
Glaze
- 2 tbsp honey or maple syrup
- Preheat Oven: Preheat your oven to 190°C (375°F) to get it ready for baking the bagels.
- Mix Dry Ingredients: In a large bowl, combine the wholemeal self-raising flour, cinnamon, mixed spice, coconut sugar, sultanas, and a pinch of sea salt. Stir briefly to evenly distribute all ingredients.
- Add Greek Yoghurt: Add the Greek yoghurt to the dry mixture and mix together with a spoon until combined into a dough.
- Knead the Dough: Sprinkle extra flour onto your work surface and transfer the dough there. Knead by hand for about 5 minutes, adding extra flour if the dough is too sticky. The dough should feel slightly tacky but not stick to your fingers.
- Shape the Bagels: Roll the dough into a ball and divide into 4 equal pieces. Roll each piece into a thick rope and join the ends to form a round bagel shape, similar to a doughnut.
- Prepare the Cross Paste: Mix the plain flour and water in a bowl until it forms a thick paste. Adjust consistency by adding more water or flour as needed.
- Pipe the Cross: Put the flour paste into a piping bag or a ziplock bag with a small hole cut in the corner. Pipe a cross onto each bagel’s surface.
- Bake: Place the bagels on a baking tray lined with baking paper. Bake on the top rack for 20-25 minutes until the bagels are a nice dark brown.
