For Ice Cream:

  • 1 brick ice cream

For Cookies:

  • 1/2 cup butter or margarine
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1/2 cup cocoa powder
  • 2 cups flour
  • 1 tsp. baking powder

Instructions

  1. Cut the ice cream: Cut the ice cream into 2×5 inch rectangles about 3/4 inch thick. Place each ice cream rectangle between aluminum foil or plastic wrap and freeze for at least 24 hours.
  2. Prepare the cookie dough: Beat butter and brown sugar until fluffy. Add eggs one at a time, then vanilla. Mix in baking powder, salt, cocoa, and flour. Wrap the dough and chill for 1 hour.
  3. Bake the cookies: Roll out the dough, cut into rectangles, place on a baking sheet, and bake at 350°F for 8-10 minutes. Cool the cookies.
  4. Assemble the sandwiches: Sandwich one ice cream piece between two cooled cookies. Store for up to one week or freeze cookies and ice cream separately for longer storage.

Notes

  • This recipe yields 6 large ice cream sandwiches, which can be cut in half to make 12 smaller sandwiches.
