Instructions

  1. Prepare the Instant Pot: Pour 1 1/2 cups of water into the inner liner of the Instant Pot. Place a trivet with handles or a steamer basket inside to elevate the apples above the water.
  2. Core the Apples: Wash the apples thoroughly. Core each apple carefully, ensuring to leave the bottom intact so the filling doesn’t leak out. Scoop out enough flesh to create a cavity that will hold the filling.
  3. Make the Filling: In a small bowl, mix together the softened unsalted butter, vanilla extract, cinnamon, nutmeg, brown sugar, chopped walnuts, and raisins until well combined.
  4. Fill the Apples: Spoon the prepared filling evenly into the wells of each cored apple, distributing the mixture so each apple is fully filled.
  5. Arrange in Instant Pot: Place the filled apples on the trivet inside the pressure cooker, ensuring they are spaced evenly and not touching the water.
  6. Seal and Cook: Lock the Instant Pot lid securely and turn the steam release knob to the sealing position. Select the Pressure Cook setting and cook on high pressure for 7 minutes.
  7. Release Pressure: Allow a natural pressure release for 5 minutes, then carefully turn the valve to release any remaining pressure manually.
  8. Check Doneness: Open the lid carefully. If the apples are still a bit firm, reseal and pressure cook for an additional 2 minutes, then release pressure again.
