Brownies:

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract

Glaze:

  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare batter: In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then mix in lemon juice, zest, and vanilla extract. Stir in flour and salt until just combined.
  3. Bake: Pour batter into the pan, smooth the top, and bake for 22–25 minutes or until a toothpick inserted in the center comes out clean.
  4. Cool and glaze: Let the brownies cool completely in the pan. For the glaze, mix powdered sugar, lemon juice, and zest until smooth. Spread the glaze over the cooled brownies and chill for 15 minutes before slicing.
