This Southern Five Layer Beef Casserole is a hearty and comforting dish that layers thinly sliced potatoes, browned ground beef, onions, tomatoes, and bell peppers, seasoned with kosher salt and black pepper, then baked to perfection.

Russet Potatoes:

  • 3 large russet potatoes, thinly sliced

Lean Ground Beef:

  • 1 pound lean ground beef, browned and crumbled

Onions:

  • 2 large onions, sliced and rings separated

Tomatoes:

  • 2 large tomatoes, sliced OR 1 (15 ounces) can diced tomatoes

Green Bell Peppers:

  • 1 1/2 green bell peppers, chopped

Seasoning:

  • Kosher salt and freshly ground black pepper, to taste

Olive Oil:

  • As needed

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare the Baking Dish: Lightly grease a 9×13-inch baking pan with butter or nonstick spray.
  3. Layer the Ingredients:
  4. Start with a layer of thinly sliced russet potatoes at the bottom of the dish. Drizzle with olive oil.
  5. Add a layer of browned and crumbled lean ground beef.
  6. Follow with a layer of sliced onions.
  7. Add sliced tomatoes or spread the canned diced tomatoes evenly.
