For the Nachos:

  • 1 tablespoon olive oil

  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 can black beans, rinsed and drained (optional)

Instructions

  1. Prepare the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent. Add the ground beef and cook until browned, breaking it apart with a spatula. Stir in the taco seasoning and a little water as per package instructions. Cook for 2-3 minutes until well combined and heated through.
  2. Assemble the Nachos: Preheat your oven to 350°F (175°C). On a large baking sheet or oven-safe dish, spread out the tortilla chips evenly. Evenly distribute the cooked beef mixture over the chips, sprinkle the black beans (if using) and jalapeño slices on top, and then generously sprinkle the shredded cheese over everything.
  3. Bake: Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  4. Serve: Remove from the oven and let cool slightly. Top with sour cream, guacamole, diced tomatoes, sliced green onions, chopped cilantro, and sliced olives if desired. Serve immediately and enjoy your loaded nachos.
