Sausage Mixture

  • 2 tbsp olive oil
  • 2 lbs bulk sweet Italian sausage (or hot, if preferred)
  • 1 (10.5 ounce) can Rotel diced tomatoes with chilies, drained

Egg Mixture

  • 16 eggs
  • 2/3 cup half and half
  • Salt & freshly cracked black pepper, to taste

Assembly

  • 20 8-inch flour tortillas
  • 2 cups shredded cheese (Cheddar, Pepper Jack, Colby Jack, or preferred blend)
  • Container of cooking spray or additional olive oil for brushing

Instructions

  1. Bake Tater Tots: Spread the frozen tater tots in a single layer on a cookie sheet and sprinkle lightly with seasoned salt. Bake according to the package instructions until golden and crispy. Allow them to cool on the stove top while you prepare the other fillings.
  2. Cook Sausage: Preheat a large skillet over medium-high heat. Add olive oil to the pan, then add the bulk sausage, breaking it up with the back of a spoon. Sauté the sausage until it develops a deep toasted color and is no longer pink inside. Drain excess fat, then return the sausage to the skillet.
  3. Add Rotel Tomatoes: Drain the Rotel diced tomatoes to remove as much liquid as possible. Stir the tomatoes and chilies into the browned sausage and sauté together for one minute. Remove the mixture to a large mixing bowl and set aside.
  4. Scramble Eggs: In a separate bowl, whisk together eggs, half and half, salt, and freshly cracked black pepper. Pour this mixture into the same skillet used for the sausage, reduced to medium heat. Stir continuously until eggs are fully cooked, scrambled, and no longer wet.
  5. Combine Sausage and Eggs: Add the scrambled eggs to the bowl with the sausage and tomatoes. Stir everything together until thoroughly combined.
  6. Set Up Assembly Line: Arrange separate bowls of baked tater tots, sausage and egg mixture, shredded cheese, and a stack of tortillas for easy assembly.
  7. Assemble Burritos: On each tortilla, place 5 to 6 tater tots, about 1 tablespoon of cheese, and approximately 1/3 cup of the sausage and egg mixture. Fold the sides of the tortilla slightly toward the center, then roll it lengthwise tightly to enclose the filling.
  8. Toast Burritos: Place the assembled burritos on a large cookie sheet, leaving about a finger’s width between each. Lightly spritz with cooking spray or brush with olive oil. Bake at 400° F for 12 to 15 minutes until the tops are just lightly toasted and golden brown.
  9. Serve: Enjoy the burritos immediately while warm and melty.
  10. To Freeze: Allow burritos to cool completely. Wrap each burrito individually in aluminum foil and place them all into a large freezer-safe bag. Freeze for up to one month.
  11. To Reheat Frozen Burritos by Microwave: Unwrap and discard foil. Place frozen burrito on a microwave-safe plate and heat on 50% power for 2 to 3 minutes until heated through.
  12. To Reheat Frozen Burritos by Oven: Keep burritos wrapped in foil and place on a cookie sheet. Bake in a 400° F oven for 30 to 40 minutes or until hot throughout.
