Ingredients

Scale

Salmon

  • 4 salmon fillets (6 ounces each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Sauce

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh basil, chopped

Instructions

  1. Season the salmon fillets: Lightly sprinkle salt and freshly ground black pepper on both sides of the salmon fillets to enhance their natural flavor.
  2. Cook salmon in skillet: Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets skin side down and cook for 4-5 minutes until the skin is crisp and the salmon is mostly cooked through.
  3. Flip and finish cooking: Carefully flip the fillets and cook for an additional 2-3 minutes until the salmon is cooked just through. Remove the salmon from the skillet and set aside.
  4. Sauté garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it.
  5. Prepare the creamy sauce: Pour in the heavy cream and chicken broth, stirring to combine with the garlic and pan drippings to build flavor.
  6. Add flavorings: Stir in the chopped sun-dried tomatoes, Parmesan cheese, lemon juice, Italian seasoning, and red pepper flakes, allowing the sauce to simmer gently.
  7. Simmer to thicken: Let the sauce simmer for about 5 minutes, stirring occasionally until it thickens slightly and flavors meld.
  8. Return salmon to skillet: Place the cooked salmon fillets back into the skillet, spooning the sauce over them to coat well.
  9. Simmer together: Allow the salmon to simmer in the sauce for an additional 2-3 minutes so the flavors infuse and the fish stays warm.
  10. Garnish and serve: Sprinkle fresh chopped basil over the top for a bright, herbal finish and serve immediately.

Notes

  • Use a meat thermometer to check salmon doneness; aim for an internal temperature of 145°F (63°C).
  • For a lighter sauce, substitute half-and-half or coconut milk for heavy cream.
  • To thicken the sauce more, simmer a few extra minutes or add a cornstarch slurry.
  • Pat salmon dry before cooking for crispier skin.
  • Experiment with herbs like thyme or rosemary for additional aroma.
  • Frozen salmon can be used if fully thawed before cooking.
