Ingredients

Scale

Salad

  • 1.5 cups cooked boneless skinless chicken breast, diced
  • 1/4 cup reduced fat feta cheese, crumbled
  • 1/4 cup celery, diced
  • 1/4 cup Persian cucumbers, diced
  • 1/4 cup roasted red peppers, diced (drained and dried)
  • 1/4 cup black olives, diced
  • 2 tbsp red onions, diced

Dressing

  • 1/4 cup nonfat Greek yogurt
  • 3 tbsp reduced fat mayonnaise
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1/2 tbsp lemon juice
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp celery seed

Instructions

  1. Make dressing. In a medium bowl, combine the nonfat Greek yogurt, reduced fat mayonnaise, freshly chopped dill, parsley, lemon juice, onion powder, salt, pepper, and celery seed. Whisk thoroughly until smooth and well blended.
  2. Add chicken and vegetables. To the dressing, gently fold in the cooked chicken breast, crumbled feta cheese, diced celery, Persian cucumbers, drained roasted red peppers, diced black olives, and red onions. Mix until all ingredients are evenly coated with the dressing.
  3. Taste and adjust seasoning. Sample the salad and add additional salt or pepper as desired to suit your taste preferences.
  4. Store in fridge. Transfer the salad to an airtight container and refrigerate.
  5. Let flavors meld. For best results, chill the salad for at least one hour before serving to allow the flavors to deepen and combine fully.

Notes

  • Use cooked chicken breast that is either poached, grilled, or roasted for best flavor.
  • Draining the roasted red peppers thoroughly is important to prevent the salad from becoming watery.
  • This salad can be made a day ahead and stored in the refrigerator.
  • Serve chilled, and enjoy it as a filling for sandwiches or wraps, or atop a bed of greens.
  • For a dairy-free option, substitute feta cheese and Greek yogurt with plant-based alternatives.
