For the Chicken Salad:

  • 2 cups cooked chicken breast, shredded
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, finely grated and drained
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup red onion, finely diced
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large mixing bowl, combine the Greek yogurt, grated cucumber, dill, parsley, lemon juice, and minced garlic. Stir until well blended. Add the shredded chicken and diced red onion to the yogurt mixture. Mix thoroughly until the chicken is evenly coated.
  2. Season with salt and freshly ground black pepper to taste.
  3. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  4. Serve the tzatziki chicken salad over a bed of mixed greens, in a pita pocket, or with whole-grain crackers.
