These nourishing homemade marshmallows are a guilt-free treat that are gluten-free, egg-free, low-fat, and protein-packed. Made with raw honey or real maple syrup, grass-fed gelatin, and flavored with vanilla, they are a healthier alternative to store-bought marshmallows. Perfect for adding to hot drinks or enjoying as a protein-rich snack.

For the Marshmallows:

  • 1 3/4 cups filtered water, divided
  • 1/2 cup pasture-raised gelatin
  • 1 1/8 cups raw honey (see notes)
  • Vanilla extract/vanilla bean paste
  • Sea salt

Instructions

  1. Bloom Gelatin: Combine 1 cup of filtered water and gelatin in a large mixing bowl. Stir until it resembles thick applesauce. Let it set while you heat the other ingredients.
  2. Heat Honey Mixture: In a saucepan, combine 3/4 cup water, raw honey, vanilla, and sea salt. Heat over medium-high heat for about 10 minutes, whisking frequently.
  3. Combine Mixtures: Slowly pour the hot honey mixture into the bloomed gelatin on low speed. Mix until combined, then increase to high speed and mix for 10-15 minutes until marshmallowy.
  4. Add Flavor: Mix in vanilla extract/vanilla bean paste until soft peaks form.
  5. Set Marshmallows: Transfer the mixture into a parchment-lined baking dish, sprinkle with sea salt or cinnamon sugar if desired. Let cool for a few hours or overnight in the fridge. Cut into squares and dust with arrowroot powder or cocoa powder.

Notes

  • Use grass-fed gelatin for best results
  • Store marshmallows in a glass container or ziplock bag
  • Marshmallows are best for melting, not roasting
