Chicken:

  • 1 pound chicken breasts (sliced thin)

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • kosher salt

Sauce:

  • 4 cloves garlic (minced)
  • 1/4 teaspoon crushed red pepper flake
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup julienne sun-dried tomatoes in oil (drained)
  • 1/2 teaspoon Italian seasoning (no salt added)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Additional:

  • 8 oz penne (uncooked)
  • 1 cup Parmesan cheese (freshly shredded)
  • fresh basil

Instructions

  1. Prepare the Chicken: Pat chicken breasts dry, season with salt and pepper, and dredge through flour. Brown the chicken in olive oil over medium-high heat. Set aside.
  2. Make the Sauce: In the same pan, sauté garlic, crushed red pepper flake, then add chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, salt, and pepper. Simmer, then add pasta and chicken. Cover and cook for 20 minutes.
  3. Finish the Dish: Remove chicken, stir in Parmesan cheese and basil. Slice or dice the chicken, mix into the pasta, and serve.

  • Feel free to add extra vegetables like spinach or bell peppers for more color and nutrients.
  • Adjust the spice level by increasing or decreasing the amount of crushed red pepper flakes.
  • For a lighter version, you can use half-and-half instead of heavy cream.
