For the Pumpkin Bread:

  • 1 can pumpkin puree (15 ounces)
  • 4 large eggs, room temperature
  • 1 cup neutral oil (such as extra virgin olive oil)
  • 1 tablespoon bourbon (or vanilla extract)
  • 1 ½ cups sugar
  • 1 cup dark brown sugar, packed
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon fine salt
  • 2 tablespoons Pumpkin Spice
  • 3 tablespoons sugar, divided
  • Oil or baking spray for preparing pans

Instructions

  1. Preheat the oven: Preheat the oven to 350°F.
  2. Prepare the pans: Grease 2 (9×5-inch) loaf pans with oil or baking spray. Sprinkle each pan with 1 tablespoon of sugar.
  3. Mix wet ingredients: In a large bowl, whisk together the pumpkin puree, eggs, oil, bourbon or vanilla, and both sugars until well combined.
  4. Combine dry ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin spice.
  5. Combine wet and dry ingredients: Slowly add the dry ingredients to the wet mixture, whisking to incorporate. Stir for 50 strokes.
  6. Fill the pans: Pour the batter evenly into the prepared loaf pans.
  7. Add sugar topping: Sprinkle the tops of each loaf evenly with the remaining sugar.
  8. Bake: Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool and slice: Remove from the oven and cool on a rack. Once cool, slice and serve. For best flavor, enjoy the bread the next day.
