Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper to prevent sticking and for easy removal of the bars.
  2. Make the Crust: In a bowl, combine 1 1/2 cups flour, 1/2 cup sugar, and 1/4 tsp salt. Cut cold, cubed butter into the mixture until it becomes crumbly. Press this mixture evenly into the bottom of the prepared pan to form the crust base.
  3. Bake Crust: Bake the crust in the preheated oven for 15 minutes or until it is lightly golden. Remove and allow it to cool slightly before adding the filling.
  4. Prepare Pineapple Filling: In a separate bowl, whisk together 2 eggs and 1 cup granulated sugar until smooth. Add 1/4 cup flour, 1/2 tsp baking powder, and 1 tsp vanilla extract, mixing well. Gently fold in the well-drained crushed pineapple to complete the filling.
