Dry Ingredients:

  • 2 cups all-purpose flour
  • 2/3 cup brown sugar
  • 3 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon Kosher salt

Wet Ingredients:

  • 1 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 eggs
  • 1/3 cup coconut oil, melted
  • 2 teaspoons vanilla extract

Topping:

  • 1/4 cup coconut oil, melted
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 350F degrees.
  2. In a medium bowl, combine all the dry ingredients – flour, brown sugar, pumpkin spice, baking powder, baking soda, and salt. Mix well.

  3. In a separate small bowl, combine all the wet ingredients – pumpkin puree, maple syrup, eggs, melted coconut oil, and vanilla extract. Whisk until well combined.
  4. Slowly mix the wet ingredients into the dry ingredients, being careful not to over mix.
  5. Transfer the batter into a gallon ziplock bag and cut a small hole in the corner to create a piping bag. Alternatively, spoon the batter into the donut pan.
  6. Spray the donut pan with cooking spray and pipe the batter in a circular motion to form donuts, filling each mold about 3/4 full.
  7. Bake in the preheated oven for 18 minutes or until a toothpick inserted comes out clean. Remove from oven and let cool for 5 minutes on a rack.
  8. Prepare the cinnamon sugar topping by combining sugar, cinnamon, and pumpkin pie spice. Brush each side of the donuts with melted coconut oil and dip them into the cinnamon sugar mixture. Serve and enjoy!
