Pancakes:

  • 1½ cups all-purpose flour
  • 3 Tablespoons granulated sugar
  • 2 Tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 cup buttermilk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon white vinegar
  • 2 teaspoons red food coloring
  • 4 Tablespoons butter (melted)

Cream Cheese Frosting:

  • 4 oz cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoons whole milk

Instructions

  1. For the pancakes: Whisk together the flour, sugar, cocoa powder, baking powder, and salt in a medium-sized bowl.
  2. Combine the eggs, milk, buttermilk, vanilla, vinegar, and red food color in a large measuring cup. Whisk to combine.
  3. Fold the wet ingredients into the dry ingredients until combined.
  4. Stir in the melted butter.
  5. Spoon 1/3 cup of the batter onto a slightly heated pan. Cook on low heat until the edges curl up and bubbles appear on the top of the pancake. Flip and continue to cook 1-2 minutes or until your pancake is cooked through.
  6. For the frosting: Combine all of the ingredients in a small bowl. Whisk using a hand mixer until fully incorporated.
  7. Serve pancakes with butter and syrup or frosting.
