Pancakes:
- 1½ cups all-purpose flour
- 3 Tablespoons granulated sugar
- 2 Tablespoons cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 1/4 cup whole milk
- 1 cup buttermilk
- 1 teaspoon pure vanilla extract
- 1 teaspoon white vinegar
- 2 teaspoons red food coloring
- 4 Tablespoons butter (melted)
Cream Cheese Frosting:
- 4 oz cream cheese
- 1 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1 Tablespoons whole milk
- For the pancakes: Whisk together the flour, sugar, cocoa powder, baking powder, and salt in a medium-sized bowl.
- Combine the eggs, milk, buttermilk, vanilla, vinegar, and red food color in a large measuring cup. Whisk to combine.
- Fold the wet ingredients into the dry ingredients until combined.
- Stir in the melted butter.
- Spoon 1/3 cup of the batter onto a slightly heated pan. Cook on low heat until the edges curl up and bubbles appear on the top of the pancake. Flip and continue to cook 1-2 minutes or until your pancake is cooked through.
- For the frosting: Combine all of the ingredients in a small bowl. Whisk using a hand mixer until fully incorporated.
- Serve pancakes with butter and syrup or frosting.
