  • 1 teaspoon garlic powder

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil to prevent sticking and ease clean-up.
  2. Prepare Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, dried thyme, paprika, salt, and pepper until they are evenly coated with the seasoning and oil for full flavor throughout.
  3. Roast Potatoes: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Place the baking sheet in the oven and roast the potatoes for about 15 minutes until they begin to soften but are not fully cooked yet.
  4. Season Salmon: While the potatoes roast, season the salmon fillets with salt and pepper on both sides to enhance their natural flavor.
  5. Add Salmon and Vegetables: Remove the baking sheet from the oven and push the potatoes to one side. Arrange the salmon fillets on the other side of the sheet. Scatter the trimmed green beans around the salmon and potatoes, then place lemon slices on top of the salmon fillets to infuse a bright citrus aroma during roasting.
  6. Finish Roasting: Return the baking sheet to the oven and roast for an additional 10–15 minutes, or until the salmon is fully cooked (it should flake easily with a fork), the potatoes are golden and crispy, and the green beans are tender.
