For the Patties

  • 1 lb ground beef
  • 1 large egg
  • ½ cup panko breadcrumbs
  • 2 tablespoons A1 steak sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 tablespoon homemade steak seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon butter (for cooking patties)

For the Gravy

  • 3 tablespoons butter
  • 1 medium onion, sliced thin
  • 3 tablespoons all-purpose flour
  • 2 ½ cups beef broth (or stock)
  • Salt and freshly cracked pepper, to taste
  • 8 oz sliced baby Bella mushrooms

Instructions

  1. Prepare the Patties: In a medium bowl, combine the ground beef, egg, panko breadcrumbs, A1 steak sauce, Worcestershire sauce, ketchup, homemade steak seasoning, garlic powder, and onion powder. Mix well using your hands or gloves until all ingredients are fully incorporated. Form the mixture into 4 round patties, about ¾ to 1 inch thick.
  2. Cook the Patties: Heat 1 tablespoon of butter in a medium skillet over medium heat. Once melted, add the patties to the skillet and cook for 5 minutes on each side until well browned and cooked through. Remove the patties from the skillet and place on a plate; cover with foil or a lid to keep warm.
  3. Prepare the Pan for Gravy: If there is more than 1 tablespoon of grease in the skillet from the patties, carefully spoon out the excess until about 1 tablespoon remains. Do not clean the skillet, as the pan drippings add flavor to the gravy.
  4. Sauté Onions: Add 3 tablespoons of butter to the skillet. Use a spoon to scrape up the browned bits from the bottom. Add the sliced onions and cook, stirring occasionally, for about 5 minutes until the onions become translucent.
  5. Make the Roux: Sprinkle the flour over the butter and onions in the skillet. Stir continuously to combine and cook for about 2 minutes until the flour turns a light golden brown, which helps remove the raw flour taste.
  6. Add Broth and Season: Gradually pour in the beef broth while stirring to prevent lumps. Cook the mixture, stirring frequently, for 3 to 4 minutes until the gravy begins to thicken. Season with salt and freshly cracked pepper, tasting and adjusting as needed.
  7. Add Mushrooms and Patties: Stir in the sliced mushrooms and return the cooked patties to the skillet. Reduce the heat to low and simmer gently for 7 to 10 minutes, allowing the mushrooms to soften and the gravy to thicken further.
  8. Serve: Serve the Salisbury steak hot with the mushroom onion gravy spooned over the top. It pairs wonderfully with mashed potatoes, rice, or your favorite vegetables. Warm bread is a great accompaniment for enjoying every bit of the savory gravy.
