Ingredients

Scale

Egg Mixture

  • 2 large eggs
  • 2 (5-ounce) cans of unsalted, boneless, skinless salmon, drained well
  • 1 tsp low-sodium Old Bay seasoning
  • 3/8 tsp ground black pepper, divided (1/4 tsp + 1/8 tsp)
  • 1 jarred roasted red bell pepper, patted dry and chopped
  • 2 scallions, thinly sliced

Dipping Sauce

  • 1/4 cup plain, non-fat Greek yogurt
  • 1/2 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/8 tsp ground black pepper (from above total)

Instructions

  1. Preheat the air fryer: Set your air fryer to 400°F and allow it to fully preheat while you prepare the mixture.
  2. Prepare the egg mixture: In a large bowl, whisk together the eggs. Add the drained salmon, 1 teaspoon Old Bay seasoning, and 1/4 teaspoon of ground black pepper. Gently fold in the chopped roasted red bell pepper and sliced scallions, combining all ingredients evenly.
  3. Prepare the air fryer basket: Line the bottom of the air fryer basket with parchment paper cut to fit, ensuring minimal overhang as per your air fryer’s manual instructions.
  4. Form and cook the egg bites: Using a 1/4 cup scoop, drop portions of the salmon mixture into the basket, spacing them about 2 inches apart. Depending on your air fryer’s size, cook in batches. Air fry for approximately 5 minutes on one side until the edges start to crisp and the bottoms turn golden. Carefully flip each egg bite and cook for another 5 minutes on the other side until golden and cooked through.
  5. Make the dipping sauce: In a small bowl, combine the plain non-fat Greek yogurt, lemon zest, lemon juice, and the remaining 1/8 teaspoon ground black pepper. Mix well to create a tangy and creamy sauce.
  6. Serve: Enjoy the salmon veggie egg bites warm with the Greek yogurt dipping sauce on the side.

Notes

  • The USDA recommends cooking egg dishes to an internal temperature of 160°F for safety.
  • Check your air fryer’s manual to ensure parchment paper is safe to use and cut the paper to fit the basket without excessive overhang to avoid fire hazards.
  • Depending on your air fryer basket size, you may need to cook the bites in multiple batches to avoid overcrowding.
  • Feel free to add fresh herbs like dill or parsley for additional flavor if desired.
