Ingredients

Scale

For the Cookie Bars

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (semi-sweet or milk chocolate)

For the Salted Caramel Drizzle

  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/4 teaspoon sea salt, plus more for sprinkling

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan or line it with parchment paper for easy removal.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt. Set aside.
  3. Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes. Then mix in the egg and vanilla extract until well combined.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Gently fold in the chocolate chips.
  5. Bake: Spread the cookie dough evenly into the prepared baking pan. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  6. Prepare the Caramel Drizzle: While the bars bake, gently heat the caramel sauce in a small saucepan over low heat until pourable. Stir in 1/4 teaspoon sea salt.
  7. Cool and Drizzle: Remove the bars from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Once cooled, drizzle the salted caramel sauce over the top and sprinkle additional sea salt if desired.
  8. Slice and Serve: Cut the bars into squares and serve. Enjoy!

Notes

  • You can substitute all-purpose flour with a gluten-free flour blend to make gluten-free bars.
  • Quick oats can be used instead of rolled oats though the texture will be softer.
  • Add chopped nuts such as walnuts or pecans to the dough for extra crunch.
  • Try different types of chocolate chips like dark or white chocolate for variation.
  • Store finished bars in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
  • Homemade caramel sauce can be made by melting sugar, then adding cream and butter carefully.
