Instructions

  1. Boil potatoes and carrots: Place the peeled and chopped potatoes and carrots in a pot of water. Boil them for 12-15 minutes until they are tender but not mushy. This ensures they hold their shape in the salad.
  2. Prepare eggs and other ingredients: While the veggies are boiling, hard boil the eggs, then peel and chop them. Chop the ham, dice the pickles, and thaw the peas. Prepare green onions and dill as needed.
  3. Cool the vegetables: Once boiled, drain the potatoes and carrots and rinse them with cold water to stop the cooking process and cool them down quickly. This helps maintain texture.
  4. Combine salad ingredients: In a large mixing bowl, add the chopped ham, diced pickles, thawed peas, and chopped hard-boiled eggs. Stir gently to combine.
  5. Add potatoes and carrots: Add the cooled potatoes and carrots to the bowl with the other ingredients, folding them in gently to avoid mashing.
  6. Make the dressing: In a small bowl, whisk together the mayonnaise, chopped fresh dill (or dried dill), salt, and black pepper until smooth and evenly blended.
  7. Mix salad with dressing: Pour the prepared dressing over the salad ingredients in the big bowl. Gently fold everything together until all ingredients are evenly coated without breaking the vegetables.
  8. Chill: Cover the bowl and refrigerate the salad for at least 1 hour. Chilling allows the flavors to meld beautifully.
