Garlic Butter Sauce

  • ½ cup unsalted butter, melted
  • 4 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the Oven: Set your oven to 450ºF and position the top rack about 4-6 inches below the broiler to prepare for roasting.
  2. Parboil the Potatoes: Place the halved baby gold potatoes in a large pot, cover with cold salted water, and bring to a boil. Once boiling, cook uncovered for 5 to 10 minutes until the potatoes are fork tender. Drain and pat dry with paper towels.
  3. Prepare Garlic Butter: While the potatoes cook, mix the melted butter with minced garlic, seasoning with salt and pepper to taste. Set aside for later use.
  4. Prepare the Sheet Pan: Lightly spray a large 21 x 15-inch sheet pan with cooking spray to prevent sticking.
  5. Arrange Vegetables: Spread the potatoes, green beans, mushrooms, and yellow onion petals evenly on the sheet pan. Drizzle half of the garlic butter over the veggies and gently toss them to coat. Season with salt and pepper.
  6. Roast Vegetables: Place the sheet pan in the oven and roast the vegetables for about 20 minutes until they are tender but not fully caramelized.
  7. Prepare the Steak: Cut the skirt steak into 2 or 3 smaller portions. Pat dry with paper towels, then season each piece generously with salt and pepper.
  8. Add Steak and Finish with Broiling: Lay the steaks on top of the roasted vegetables, drizzle with the remaining garlic butter, and switch the oven to the broil setting. Broil the steaks for 4 minutes on one side, then flip and broil for an additional 3 to 4 minutes for medium-rare doneness.
  9. Rest and Serve: Remove the sheet pan from the oven and allow the steaks to rest for 5 to 10 minutes to redistribute juices before serving with the roasted vegetables.
