This Shrimp Fried Rice recipe is a quick and flavorful dish that is perfect for a weeknight dinner. Loaded with shrimp, vegetables, and seasoned with soy sauce and sesame oil, this homemade fried rice is better than takeout!

For the Shrimp:

  • 1 lb 26-30 count uncooked shrimp (peeled and deveined)
  • 1 tsp corn starch
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 3 Tbsp LIGHT olive oil, or canola

For the Fried Rice:

  • 4 large eggs (beaten)
  • 1/4 cup green onion (finely chopped)
  • 5 cups leftover chilled white rice (rinse rice before cooking)
  • 12 oz frozen carrots and peas (thawed)
  • 2 Tbsp soy sauce or coconut aminos (or added to taste)
  • 1 1/2 tsp sesame oil

Instructions

  1. Marinate Shrimp: In a bowl, mix shrimp with cornstarch, salt, and pepper. Let marinate for 10 minutes.
  2. Cook Shrimp: Heat oil in a skillet, cook shrimp until opaque, then remove.
  3. Cook Eggs: Cook beaten eggs in the same skillet, then remove.
  4. Sauté Onions: Cook green onions until fragrant.
  5. Add Rice: Stir in rice and cook until sizzling.
  6. Season and Mix: Add soy sauce, sesame oil, vegetables, shrimp, and eggs. Stir well.
  7. Finish: Cook until hot and sizzling. Adjust seasoning with more soy sauce if needed.
