Eggplant:

  • 1 large eggplant, cut into 1-inch pieces

Zucchini:

  • 1 large zucchini, chopped into 1-inch pieces

Tomatoes:

  • 3 tomatoes, roughly chopped

Bell Pepper:

  • 1 bell pepper, diced (any color)

Onion:

  • 1 small onion, finely chopped

Garlic:

  • 3 garlic cloves, minced

Olive Oil:

  • 1 tbsp olive oil

Red Wine or Broth:

  • ¼ cup red wine or vegetable broth

Seasonings:

  • 1 tsp paprika
  • 1 tsp brown sugar
  • ¾ tsp sea salt
  • ½ tsp dried oregano
  • ⅓ tsp smoked paprika
  • ¼ tsp red pepper flakes
  • ¼ tsp ground ginger
  • 1 tbsp tomato paste
  • 1 tbsp balsamic vinegar
  • Fresh thyme, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Vegetables – Chop the eggplant, zucchini, tomatoes, bell pepper, onion, and garlic. If using fresh thyme, chop it.
  2. Sauté the Aromatics – Heat olive oil, cook onion until golden, then add garlic and eggplant.
  3. Cook the Eggplant & Garlic – Let eggplant absorb flavors and soften.
  4. Add Wine & Spices – Pour wine/broth, add spices, and simmer.
  5. Add the Remaining Vegetables – Add zucchini, bell pepper, and tomatoes; simmer until tender.
  6. Finish with Tomato Paste & Balsamic Vinegar – Stir in tomato paste and balsamic vinegar.
  7. Taste & Serve – Adjust seasoning, garnish with thyme, and serve warm.
