Ingredients

Scale

For the Chicken:

  • 1.5 lbs chicken thighs or drumsticks, skin-on or skinless
  • 1 tablespoon vegetable oil (optional for baking)
  • Salt and pepper, to taste

For the Sticky Honey Gochujang Glaze:

  • 2 tablespoons gochujang (Korean chili paste)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (optional, for thickening)

For Garnish:

  • Sesame seeds
  • Sliced green onions

Instructions

  1. Prep the Chicken: Pat the chicken dry with paper towels. Season generously with salt and pepper on both sides. For extra crispiness, you can lightly coat the chicken with a small amount of oil.
  2. Prepare the Glaze: In a bowl, mix gochujang, honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger until smooth. Set aside.
  3. Cook the Chicken:
    Air Fryer Method:
    • Preheat Air Fryer: Preheat to 375°F (190°C). Arrange the chicken pieces in a single layer in the air fryer basket.
    • Cook Chicken: Air fry for 15-18 minutes, flipping halfway through, until the internal temperature reaches 165°F (75°C). The skin should be golden and slightly crispy.

    Baking Method:

    • Preheat Oven: Preheat to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
    • Bake Chicken: Arrange the chicken pieces on the prepared sheet. Bake for 20-25 minutes, flipping halfway through, until the chicken is fully cooked and golden.
  4. Glaze the Chicken:
    • Heat the Glaze: In a small saucepan over medium heat, bring the glaze mixture to a simmer. Stir frequently and cook for 2-3 minutes until slightly thickened. If desired, add the cornstarch slurry for a thicker consistency.
    • Coat the Chicken: Toss the cooked chicken in the warm glaze until evenly coated. Alternatively, brush the glaze onto the chicken.
  5. Garnish and Serve:
    • Add Finishing Touches: Sprinkle with sesame seeds and sliced green onions before serving.
    • Serve Hot: Pair with steamed rice, roasted vegetables, or a fresh salad.
