  1. Pulse freeze-dried strawberries: In a food processor or blender, pulse the freeze-dried strawberries until they form a fine powder. Set aside.
  2. Prepare the Chocolate Mixture: Microwave the white chocolate chips in a large heatproof bowl for 30 seconds to soften. Add the strawberry powder and whisk together.
  3. Heat the Cream: Microwave the heavy cream in a medium bowl for about 1.5 minutes until the edges simmer. Pour the hot cream over the chocolate mixture and let it sit for 20 seconds. Whisk until smooth and well combined.
  4. Chill the Ganache: Cover the ganache with plastic wrap touching the surface and chill in the refrigerator for 1-2 hours, or until it reaches a peanut butter-like consistency.
