For the Cake:

  • 4 large eggs (separated)
  • 1.5 cups non-fat Greek yogurt (350 g/12.5 oz)
  • ⅓ cup monkfruit sweetener (70 g/2.5 oz)
  • ⅓ cup cornstarch (40 g/1.4 oz)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Separate the Eggs: Separate yolks from egg whites making sure not to leak any yolk into egg whites as they won’t beat to stiff peaks.
  2. Beat Egg Whites: Pour egg whites into a bowl of an electric mixer and beat until stiff peaks form. Transfer to another bowl if using the mixer to cream the yolks.
  3. Cream the Yolks: Add monkfruit sweetener to egg yolks, vanilla extract and cream the eggs until they become light and fluffy.
  4. Add Yogurt: Once the eggs are creamed, add yogurt and incorporate into the eggs.
  5. Incorporate Cornstarch: Sift cornstarch into the egg and yogurt mixture and combine.
  6. Fold in Egg Whites: Carefully fold the egg whites into the yogurt egg batter.
  7. Prepare Baking Dish: Line a 7×11-inch dish with parchment paper. Pour the batter into the dish.
  8. Bake: Place the baking dish on a larger baking sheet. Add boiling water to the sheet until the baking dish is partially submerged. Bake at 330°F (160°C) for 45 minutes. Raise the temperature to 350°F (180°C) and bake for an additional 15 minutes.
  9. Cool: Turn off the oven, crack the door open, and let the cake cool for 1-2 hours.
