Dough:
- 1 ¾ cup warm water (105-115°F)
- 2 tsp sugar
- 1 packet active dry yeast
- 2 cups bread flour
- 2 cups all-purpose flour
- 2 tsp salt
- 6 tbsp olive oil (divided)
Toppings:
- 1 jar raspberry jam (I love Bonne Maman)
- 2 cups Powdered sugar
- 2–4 tbsp milk (depending on consistency (I used whole milk))
- Prepare the Dough: Combine warm water and sugar in a stand mixer. Add yeast and let sit. Mix in flours and salt until a sticky dough forms.
- Rise the Dough: Coat dough with oil, let rise for an hour.
- Shape and Rise Again: Spread oil in pan, place dough, let rise for another hour.
- Preheat and Prep: Preheat oven. Oil dough, poke holes, spread jam.
- Baking: Bake until golden brown.
- Fill with Jam: Poke holes, fill with jam.
- Prepare Icing: Mix powdered sugar and milk for icing.
- Finish and Serve: Ice the focaccia, cut into squares, and enjoy!
