These crispy and flavorful chicken taquitos are a perfect appetizer or snack for any occasion. Filled with a creamy chicken and cheese mixture, they are fried to golden perfection and served with your favorite toppings.

For the Taquitos:

  • 3 cups shredded cooked chicken
  • 6 ounces cream cheese, softened
  • 1½ cups baby spinach, stems removed and chopped
  • 1½ cups shredded Colby Jack cheese, or Mexican blend cheese
  • ½ cup salsa, store-bought or homemade
  • ⅓ cup sour cream
  • Salt and pepper to taste
  • 12 (6-inch) corn tortillas (or flour tortillas)

For Toppings:

  • Shredded lettuce
  • Chopped tomatoes
  • Sour cream
  • Pico de Gallo

Instructions

  1. Heat Oil: Fill a saucepan with ½ inch of oil and heat over medium heat to 350 degrees F.
  2. Prepare Filling: In a large bowl, mix together chicken, cream cheese, spinach, Colby Jack cheese, salsa, and sour cream. Season with salt and pepper.
  3. Fill and Roll: Place a portion of the chicken mixture in the center of a tortilla, roll it up, and fry until golden brown.
  4. Drain and Serve: Once fried, drain the taquitos on paper towels and serve warm with your favorite toppings.
