  • 3 cups golden potatoes

  • 1 teaspoon black pepper
  • 4 cloves garlic
  • 2 teaspoons tomato paste
  • 2 quarts beef stock
  • 2 sprigs fresh thyme

For the Dumplings:

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon butter (room temperature)
  • 1/3 to 1/2 cup milk
  • Fresh herbs (parsley and chives, optional)

Instructions

  1. Prepare and Sear the Meat: Gather the stew meat, season, coat with flour, and sear in a pot.
  2. Sauté the Vegetables: Sauté onion, add carrots, potatoes, rosemary, and seasonings.
  3. Combine Ingredients and Begin Stewing: Return meat, add beef stock, thyme, and simmer for 2 hours.
  4. Prepare the Dumpling Batter: Dice herbs, mix flour, baking powder, salt, butter, and milk to form a sticky dough.
  5. Add Dumplings to the Stew: Remove thyme, drop spoonfuls of dough into the stew, and cook until done.
