  • 1 and 1/2 teaspoons vanilla essence
  • 2 large eggs
  • 3 cups plain flour, measured accurately (390 grams)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 and 1/2 teaspoons ground cinnamon

Crumble:

  • 1/2 cup white sugar (105 grams)
  • 2 teaspoons ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup salted melted butter (57 grams)
  • 1/4 cup packed light brown sugar (55 grams)
  • 1 and 1/2 tablespoons white sugar (20 grams)
  • 1/2 cup plus 1 tablespoon plain flour (73 grams)
  • 3/4 teaspoon ground cinnamon

Instructions

  1. Prepare the Peach Filling – Add diced peaches, sugars, lemon juice, cinnamon, and nutmeg to a medium saucepan over medium heat. Cook until bubbly. Stir in corn starch mixture, then vanilla. Chill.
  2. Make the Cookie Dough – Cream butter, sugars, vanilla, and eggs. Add dry ingredients, mix, then chill the dough.
  3. Scoop & Chill the Dough – Form dough balls, chill for 3 hours.
  4. Make the Crumble – Mix streusel ingredients, bake until golden brown.
  5. Bake the Cookies – Roll dough in sugar-spice mix, bake, shape, and cool.
  6. Optional Glaze – Whisk glaze ingredients to desired consistency.
  7. Assemble the Cookies – Fill cookies with peach filling, top with crumble and glaze.
