Poblano Peppers:

  • 4 medium poblano peppers

Ground Beef Mixture:

  • 1 pound lean ground beef
  • ½ cup white onion, chopped
  • ⅓ cup Kikkoman® Teriyaki Marinade & Sauce
  • ½ teaspoon cornstarch
  • 1 cup broccoli florets, finely chopped
  • ½ cup brown rice, cooked

For Serving:

  • ¼ cup cilantro, chopped

Instructions

  1. Preheat Oven: Preheat oven to 375ºF and prepare a baking pan with parchment paper. Cut poblano peppers in half lengthwise, remove seeds, and place on the baking sheet, cut side up.
  2. Cook Ground Beef: In a large skillet over medium heat, cook ground beef for 5 minutes. Add chopped onions and cook for an additional 3 minutes.
  3. Prepare Teriyaki Mixture: Whisk together teriyaki sauce and cornstarch. Pour over the ground beef and simmer for 2 minutes to thicken.
  4. Add Broccoli and Rice: Stir in chopped broccoli and cooked brown rice into the beef mixture.
  5. Stuff Peppers: Spoon the beef mixture into the poblano pepper halves. Cover the pan with foil and bake for 20 minutes.
  6. Serve: Garnish with chopped cilantro and serve hot.
