Poblano Peppers:
Ground Beef Mixture:
- 1 pound lean ground beef
- ½ cup white onion, chopped
- ⅓ cup Kikkoman® Teriyaki Marinade & Sauce
- ½ teaspoon cornstarch
- 1 cup broccoli florets, finely chopped
- ½ cup brown rice, cooked
For Serving:
- Preheat Oven: Preheat oven to 375ºF and prepare a baking pan with parchment paper. Cut poblano peppers in half lengthwise, remove seeds, and place on the baking sheet, cut side up.
- Cook Ground Beef: In a large skillet over medium heat, cook ground beef for 5 minutes. Add chopped onions and cook for an additional 3 minutes.
- Prepare Teriyaki Mixture: Whisk together teriyaki sauce and cornstarch. Pour over the ground beef and simmer for 2 minutes to thicken.
- Add Broccoli and Rice: Stir in chopped broccoli and cooked brown rice into the beef mixture.
- Stuff Peppers: Spoon the beef mixture into the poblano pepper halves. Cover the pan with foil and bake for 20 minutes.
