  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 pound lean ground beef
  • 4 cloves garlic, minced

Spices:

  • 12 tablespoons chili powder*
  • 1 tablespoon ground cumin
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Additional:

  • 3 tablespoons tomato paste
  • 1 ¾ cups low sodium beef broth
  • 28 ounce can fire roasted crushed tomatoes
  • 15 ounce can red kidney beans, rinsed and drained
  • 15 ounce can pinto beans, rinsed and drained

For Topping:

  • Shredded cheddar cheese
  • Sour cream
  • Avocado
  • Chopped red or green onions
  • Cilantro

Instructions

  1. Heat Olive Oil: Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Add chopped onion and cook until softened.
  2. Cook Ground Beef: Add ground beef to the pot, cook until browned, and drain off excess grease. Stir in minced garlic.
  3. Add Spices: Stir in chili powder, cumin, brown sugar, oregano, salt, pepper, and tomato paste until combined.
  4. Combine Ingredients: Pour in beef broth, crushed tomatoes, and beans. Bring to a boil.
  5. Simmer: Reduce heat, simmer for 1-2 hours, covering initially and uncovering towards the end to thicken.
  6. Serve: Serve chili hot with desired toppings.

Notes

  • You can customize the spice level by adjusting the amount of chili powder used.
  • This chili is even better the next day as the flavors have more time to meld together.
