  • 1 tablespoon seasoned rice vinegar
  • 1 tablespoon soy sauce

Shrimp Topping

  • 1 pound uncooked medium shrimp, peeled and deveined
  • ⅓ cup seasoned panko bread crumbs
  • 1 tablespoon canola oil

Garnishes

  • ½ tablespoon white sesame seeds, toasted
  • ½ tablespoon black sesame seeds
  • 2 tablespoons thinly sliced scallions
  • ½ avocado, finely chopped
  • Cooking spray (for muffin tin)

Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C). Lightly spray a muffin tin with cooking spray to prevent sticking.
  2. Season the Rice: Spread the warm cooked sushi rice evenly on a rimmed baking sheet and sprinkle 1 teaspoon of seasoned rice vinegar over it. Allow it to cool slightly.
  3. Make Mayonnaise Mixture: In a medium bowl, combine Japanese mayonnaise, Sriracha, and the remaining 1 tablespoon of seasoned rice vinegar until smooth. Remove 1/4 cup of this mixture and set aside in a small bowl for drizzling later.
  4. Marinate Shrimp: Stir soy sauce into the remaining mayonnaise mixture in the medium bowl. Add the peeled and deveined shrimp, tossing them until well coated.
  5. Assemble Sushi Cups: Place one quartered nori sheet into each muffin cup. Using damp hands, fluff and separate the seasoned rice grains, then place about 2 1/2 tablespoons of rice evenly into each nori cup, pressing it to form a base. Top each with 3 shrimp coated in the mayo-soy mixture, discarding any leftover marinade.
  6. Prepare Panko Topping: Mix the seasoned panko bread crumbs with canola oil in a small bowl to moisten.
  7. Bake Sushi Cups: Bake the shrimp cups for 8 minutes at 400°F. Remove the muffin tin, sprinkle a generous pinch of the panko mixture atop each cup, then return to the oven and bake for an additional 6 to 7 minutes until shrimp are fully cooked and panko is golden and crispy.
  8. Garnish and Serve: Carefully remove cups from the muffin tin onto a serving platter. Drizzle each cup with the reserved mayonnaise mixture. Sprinkle with toasted white and black sesame seeds, thinly sliced scallions, and top with finely chopped avocado. Serve hot for the best flavor and texture.
