  • 1/4 cup espresso or strong brewed coffee (for syrup)
  • 2 tbsp sugar (for syrup)

Instructions

  1. Preheat oven and prepare baking sheets: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Prepare cookie dough: In a bowl, whisk together flour, instant coffee, cocoa powder, and a pinch of salt. Set aside.
  3. Cream butter and sugar: In another bowl, cream butter and sugar until fluffy. Add egg and vanilla; mix well.
  4. Combine wet and dry ingredients: Gradually combine dry ingredients with wet mixture until just combined.
