This Tortellini Pasta Salad is a colorful and flavorful dish that is perfect for picnics, potlucks, or a light summer meal. Filled with cheese tortellini, fresh vegetables, herbs, and a tangy dressing, it’s sure to be a hit at any gathering.

Tortellini Pasta Salad:

  • 20 oz refrigerated cheese tortellini
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, peeled and chopped
  • 1/2 red onion, thinly sliced
  • 1 cup pitted kalamata olives, chopped
  • 1 cup fresh mozzarella balls
  • 1/2 cup chopped salami or pepperoni
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach or arugula
  • 1/4 cup chopped fresh basil

Dressing:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Tortellini: Cook the tortellini in a large pot of salted water until al dente. Drain and rinse under cold water.
  2. Make the Dressing: In a jar, combine olive oil, vinegar, mustard, honey, garlic, oregano, salt, and pepper. Shake well to emulsify.
  3. Toss with Dressing: Pour half of the dressing over warm tortellini, toss gently, and let cool.
  4. Add Ingredients: Combine tomatoes, cucumber, onion, olives, mozzarella, salami, Parmesan, spinach, and basil with tortellini. Pour remaining dressing, toss gently.
  5. Chill and Serve: Refrigerate salad for at least 2 hours. Adjust seasoning if needed. Garnish with basil and Parmesan before serving.

Notes

  • This salad can be made ahead and stored in the refrigerator for up to 2 days.
  • You can customize this salad by adding grilled chicken, artichoke hearts, or sun-dried tomatoes.
