Ingredients

Scale

Sushi Rice

  • 2 cups cooked short-grain sushi rice
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

Spicy Vegan Mayo Sauce

  • 1/2 cup vegan mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce or tamari

Vegetables & Garnish

  • 1 small cucumber, diced
  • 1 small carrot, shredded
  • 1 ripe avocado, diced
  • 2 stalks green onions, chopped
  • 1 tablespoon toasted sesame seeds
  • 2 nori sheets, crumbled or cut into strips
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a baking dish to prevent sticking.
  2. Season the Rice: In a bowl, combine the cooked sushi rice with rice vinegar, sugar, and salt. Mix well to evenly distribute the seasoning, ensuring the rice is flavorful throughout.
  3. Make Spicy Mayo Sauce: In a separate bowl, whisk together vegan mayonnaise, sriracha sauce, and soy sauce or tamari until smooth. This spicy mayo will add a creamy, tangy heat to the bake.
  4. Layer Rice in Dish: Spread the seasoned rice evenly in the prepared baking dish. Press it down gently to compact the rice layer for a good base.
  5. Add Spicy Mayo Layer: Spoon the spicy mayo mixture over the rice layer. Smooth it out with a spatula to create an even top layer over the rice.
  6. Add Vegetables: Sprinkle shredded carrots and diced cucumber evenly over the spicy mayo layer for crunch and freshness.
  7. Bake Sushi Bake: Place the baking dish in the oven and bake for 12 to 15 minutes, or until the top is bubbling and golden around the edges, indicating it’s heated through and slightly caramelized.
  8. Rest After Baking: Remove the dish from the oven and let it sit for 5 minutes to cool slightly and allow flavors to meld.
  9. Add Fresh Garnishes: Top the baked sushi with diced avocado, chopped green onions, toasted sesame seeds, and crumbled or sliced nori sheets. Optionally, drizzle with a little lemon juice to brighten flavors.
  10. Serve Warm: Scoop portions of the sushi bake onto plates and enjoy warm as a hearty and flavorful vegan dish.

Notes

  • You can substitute tamari for soy sauce for a gluten-free option.
  • Adjust the amount of sriracha to control the spice level.
  • Letting the bake rest after cooking helps it firm up for easier serving.
  • Add lemon juice at the end for brightness, but it’s optional.
  • Store leftovers covered in the fridge for up to 3 days and reheat before serving.
