For the buffalo white bean base:

  • 1 (15 ounce) can white beans, rinsed and drained
  • 4 ounces cream cheese
  • ½ cup plain whole milk greek yogurt (or sour cream)
  • 2/3 cup medium or hot buffalo sauce

For the mix-ins:

  • 1 (15 ounce) can white beans, rinsed and drained
  • ¾ cup shredded mozzarella cheese, divided
  • ¾ cup sharp cheddar cheese (or a spicy cheddar if you’d like), divided
  • ¼ cup diced green onion (green part only)

Instructions

  1. Preheat oven: Preheat oven to 375 degrees. Grease a 9-inch oven-safe skillet or 8×8 inch pan with nonstick cooking spray.
  2. Prepare base: In a food processor, blend 1 can of white beans, cream cheese, greek yogurt, and buffalo sauce until smooth. Pour into prepared skillet or pan.
  3. Add mix-ins: Gently stir in the remaining can of beans, 1/4 cup mozzarella, 1/4 cup cheddar, and green onions. Spread evenly. Top with remaining shredded cheeses.
  4. Bake: Bake for 25-30 minutes until cheese is bubbly and slightly golden brown. Garnish with cilantro and green onions.
